Cream Cheese Filling 1 1/4 cups cream cheese 1/2 cup sour cream 3/4 cup sugar 3 eggs 130 g chocolate 1 tablespoon butter 2 teaspoons vanilla extract (optional) |
Crumb Crust 2 cups cookie crumbs, preferably cracker 70 g chocolate |
Melt chocolate for the crumb crust together with the butter in a small saucepan. |
Add cracker crumbs and stir well. Actually this amount of cracker crumbs gives a pretty solid bottom layer for your cheesecake. If you want it thinner, you may either spread part of the crumbs to the sides of the bottom or just to reduce the quantity twice. However if you are using a form with a larger diameter you don't have to change anything. |
Press crumb mixture into bottom of a 9-inch pan and put into refrigerator. Preheat oven to 350 degrees F (175 degrees C). |
Meanwhile beat together cream cheese, sour cream, sugar and salt until smooth and creamy. Blend in the eggs. |
In a small saucepan melt chocolate and butter. It's better to do it on a low heat constantly stirring or in top of a double boiler over hot water. Gradually pour in chocolate mixture beating on low speed until well-blended. |
Pour the chocolate mixture into prepared crust. |
Bake for 50 - 70 minutes or until filling is firm. Cool cheesecake for 1 hour without opening door. Take out of the oven and chill several hours or overnight. |
Cut into pieces and serve either plain or with whipped cream or with whipped cream and fruits. It is worth chocolate lovers' attention, whatever option you choose! |
