Centers 80 g dark chocolate, 60-70% cocoa 1/3 cup heavy cream Batter 170 g dark chocolate, 60-70% cocoa 3/4 cup unsalted butter, cut into pieces 3 eggs 3 egg yolks 1/2 cup brown sugar 1 teaspoon vanilla extract or vanilla sugar 1/2 cup cake flour |
Making It Happen In Your Kitchen
Melt the the chocolate for the filling in a small saucepan together with the cream. You can do it either in double boiler or in a heatproof bowl placed into a larger pan with a boiling water. Another option is to melt it on low heat constantly stirring. In this case you'll need to be really careful not to burn it. |
Stir the mixture until even and let cool. Put it into 12 small pieces on the foil and refrigerate for about 2 hours, or until firm. Once the filling is ready, proceed with the batter. Preheat oven to 350°F (175°C). Butter and flour 12 small baking cups. |
Melt the chocolate for the batter and the butter in the same way as for the centers, stirring occasionally until smooth, let cool a bit. In a separate bowl blend with a mixer eggs, egg yolks, sugar, and vanilla until thick and light. Fold the melted chocolate mixture and flour into the egg mixture just until combined. Spoon the cake batter into the cups. |
Sink a chocolate ball in the middle of every cup and cover with the batter using a teaspoon where needed. Bake for about 15 minutes, or until the cake is firm to the touch. Remove from the oven and let sit for about 5 minutes. If necessary run a small, sharp knife around the inside of each cup. In a nonstick baking forms they usually fall out easily by themselves. |
Place an upside-down plate on top, invert, and remove the cakes. Garnish with sugar powder, berries or whipped cream. Serve hot for the lava to flow out beautifully! |
