This recipe is a perfect solution for those who can't tolerate gluten but still know what real craving for a moist chocolate cake means!

Ingredients 2/3 cup brown sugar 1/2 cup unsweetened cocoa powder 60 g bittersweet chocolate 200 g unsalted butter 1/4 cup water 1/4 teaspoon salt 6 eggs 1 teaspoon vanilla extract (optional) |
"And what's there in a saucepan above?" you may ask. It's just sugar syrup made of 1/4 cup water and 2/3 cup brown sugar. Put them together in a saucepan and heat on the stove until the sugar dissolves. Ready! |
Preheat the oven to 300°F (150°C) and prepare the baking form. Since we are not using the flour for this recipe, let's replace it with cocoa. For the purpose of powdering the baking form as well. |
In a small saucepan melt the butter, add chocolate and sugar syrup, stir well and let it cool a bit. |
Now it's time to combine the components. Beat the eggs with a mixer, add chocolate mixture... |
...and cocoa powder. Mix until even. |
Pour the batter into the form and bake for 40-50 minutes. The center may still look wet. Chill the cake in the pan, better overnight, but not necessary. Then invert onto the serving plate. Don't worry if the cake upper surface looks not "like a very beautiful picture". When you turn it upside down the bottom surface will be perfect for frosting and just visually. |
Here it goes! You may cover the cake with melted white chocolate just like I did. |
