This cake is a great treat to celebrate apple season in summer and autumn or just to create a cosy home mood with a luring aroma of baked apples and cinnamon. |
Ingredients 3 apples 3 cups flour 2/3 cup butter 2 eggs 1 cup yoghurt 1 cup brown sugar 1 1/2 teaspoon vanilla sugar or vanilin 1 1/2 teaspoon baking soda 1-2 tablespoons cinnamon with sugar for dressing (optional) |
Preheat oven to 350°F (175°C). Grease and flour square baking pan and set aside. Let the butter soften at room temperature. |
Combine together softened butter, sugar, vanilla, eggs yoghurt, baking soda. Mix until even. Then gradually fold in the flour and the chopped apple. |
Spoon the batter into the prepared baking form.
Cut remaining two apples into slices and use them for decoration.
When putting the apples you may feel like there is too much of them, don't be scared - for this cake it's the more the better! If you have done all the previous steps right the batter will rise and fill in the spaces between apple slices.
Final touch: sprinkle the cake with cinnamon and sugar mix. This step is optional, but it just adds an 'oh so good!' aroma and 'cosy home in winter' mood to this dessert. |
Bake 50-80 minutes. Make sure that the batter is well baked: the time depends on the quantity of apple slices on the top. The more fresh apples you have put there and covered with sugar the more juice they will make while baking. So a few additional minutes can be required to make sure that the batter is not raw inside. Though it is always a matter of taste! |
Let the cake cool down a bit in the form and take it out. Cut into slices and enjoy your cup of tea with a fresh baked fresh apple cake! |
